My old standby, quickest dish you can make. Cauliflower rice, brussels sprouts, organic chicken chopped up. Season with avocado oil or extra virgin olive oil and Himalayan Sea Salt. Bake at 350 for 20 minutes. Add organic shredded cheese (any will do) and sprinkle with parmesan. Bake until browned. Most ingredients are frozen and can be purchased reasonably.

Do you ever wonder if you’re truly addicted to your daily 3 PM candy bar or those fresh baked chocolate chip cookies you can never seem to resist? According to researchers at Princeton University, that is very likely the case. Researchers found that after rats binge on sugar or sugar water their brains show the same changes on catscans as those who are addicted to cocaine and heroin. In fact, the rats suffered similar withdrawl symptoms as those detoxing from illicit drugs. The Researchers at Princeton University studying bingeing and dependency in rats have found that when the animals ingest large amounts of sugar, their brains undergo changes similar to the changes in the brains of people who abuse illegal drugs like cocaine and heroin.

I wanted to share my delicious and nutritious Kale Garden Stir Fry Recipe. You can tailor it to your liking. According to Science Daily, Kale is very high in beta carotene, vitamin K, vitamin C, lutein, zeaxanthin, and calcium. Kale is known to have anti-cancer properties. And happens to be very tasty. Here’s a great recipe that transforms the nutritious leafy greens into a rainbow of deliciousness.

Kale Garden Stir Fry Recipe

Place 1 Bunch of Kale (Trader joe’s has bags of organic cleaned kale, use ½ a bag) in sautee pan

Pour ½ cup of organic chicken broth or vegetable broth over kale

Add mushrooms, tomatoes, hearts of palm, four thin slices of green apple, one ounce of fresh mozzarella, red and yellow peppers and sprinkle with hot sauce.

Stir on and off for five minutes. Do not drain the broth as it contains various vitamins and minerals.

Serve in a bowl by itself or layered with grilled chicken or fish on top.

This Kale Garden Stir Fry makes a filling, nutritious and delicious dinner!

We miss you John. There never was and will never be another like you! If only we all had John Lennon’s attitude, the pharmaceutical industry would be struggling and therapists would be searching for clients!

To Be Happy-how simple a concept yet how utterly elusive for many who spend their lives in the quest for more “stuff!” Which in the end never brings true happiness.

When you look back on the greatest experiences and moments in your life, you ask “when was I the happiest?”

It’s time we redefine what constitutes happiness. Because all of this striving for perfection, obtaining more and more material goods, having the perfect house or car in order to keep up with the neighbors and young girls and boys starving themselves to achieve a perfect body, only makes everyone miserable! It’s never enough!

Yet, when we do good for others, we feel good and it makes us happy. So, let us, in the wise words of John Lennon, strive to be Happy!
